Oh dear sorry about that! Sounds like p...Hi Denise! Oh dear sorry about that! Sounds like perhaps you didn't cook the syrup until hard ball stage. If you used a thermometer, it should be to 144 degrees celcius - or when you drop it into a cup of water the syrup should go very hard and brittle almost immediately. This is what makes the honeycomb very hard and brittle as opposed to soft and toffee-like. Demerara is a golden brown sugar with quite a fruity taste so it just gives another level of flavour to the toffee :).
